The Summer Special – Mango Chia Seed Pudding

Mangoes have always been special to me. The taste and the texture bring so much happiness

And when these are combined with the goodness of antioxidant loaded Chia Seeds, it’s the best one can have to satisfy their taste buds in this heat.

This Chia Seed pudding is very simple and yummy.

Ingredients required

Digestive biscuits 10-12

Butter 1-2 tbsp

Coconut milk (I used regular as I didn’t have coconut milk at that time) 1/2 cup

Chia seeds (half of milk)

Mangoes offcourse – diced and pureed both

Fresh mint leaves

Vanilla essence

Cinnamon

In the morning

Crush the biscuits. Just put them in a zip lock and use a rolling pin to crush them. Mix them in melted butter. Use 1 tbsp on butter initially, you can add a little more only if required. Just make sure the mixture has a crumbled feel.

Preparation

Mix Chia seeds in milk, add a few drops of Vanilla Essence and a pinch of Cinnamon, give it a nice stir and store it in the fridge overnight.

Layering the pudding

In a glass, add 1 tbsp of the crumbled biscuits layer, about 2 tbsps pf mango pulp, then add 3-4 tbsps on chia seeds coconut milk, top it with diced mango (as much as you want) and garnish it with left over crumble and fresh mint leaves!!

That’s it!!!

Refrigerate for atleast an hour before serving!!

Isn’t it the simplest pudding ever

Tip – You can add any fruits of your choice, top it with some muesli/cereal and dry fruits and this will make for a great breakfast

A lot of times, I just add Banana, Honey Almond Cornflakes and some cranberries and it just tastes yumm!!

Staying in North India, we get to eat the best of the mango variety, the Safeda aam I like to use this variety for almost all the puddings and desserts.

Made this simplest of puddings a few days back..and it was a hit!!
